My husband hates it, but my recipe for Saltimboca calls fot it.
Does anyone have a suggestion to substitute sage with?
Sage in saltimboca imparts a distinct taste not found in any other herb. It wouldn't be saltimbocca without it, however, if you just eliminate it the final product is now commonly referred to as Veal Monte Cristo. If you want to add color to the product just finely chop some Italian parsley and garnish the product after it is cooked. Another alternative would be to replace the sage leaf with a fresh basil leaf it will be totally different in flavor but would work well.
Reply:I use marjoram ( a milder herb, similar to oregano ) in my recipe. Also thyme and / or fresh rosemary is a good substitute.
Reply:As those people are not familiar with the dish your cooking, I am I was a chef for a number of years and did work in Northern Italian based operations, for that, a few sprigs of flat leaf parsley (tops only) is fine even a touch of garlic rubbed on the meat or to get the parsley and prosciutto to stick mix a bit of oil and chopped garlic, put the ham down and the parsley on top and the roll, I use large cocktail sticks of small bamboo skewers cut in half, just enough to fold over the meat and brown them well.
Sauce wis I alway prefered a marsala and butter reduction, but white wine is fine also.

Reply:since he doesn't like sage, you won't want to use poultry seasoning (the main ingredient is sage) ... try oregano or thyme
