Scallops are good to me any old way.....but tell me how to make this Sage brown butter sauce ;)
Reply:Looks like someone from the scallop liberation front has been exercising their disapproving finger.(sad or what!) Use the Sage carefully,as it is quite a strong flavour. Or try Tarragon or Coriander(leaf) Enjoy!
Reply:yes
Reply:only if the scallops are not over cooked. a newbie chef will overcook them and they taste like rubber. the secret is to sear them, remove them, make the recipe, add them back to it to heat them up - and yummmmmmmmmy
Reply:It sounds good, and I think it would taste okay, but in my opinion, sage and brown butter are two strong flavors that will overwhelm delicate scallops. On the other hand, a plain brown butter sauce would be good. Save your sage for thanksgiving.
Reply:that sounds excellent! serve it with a fruity, herbal, vegital sauvignon blanc

a good* one is $22 and is

Hubert Veneau Pouilly-Fume 2005

*meaning good reviews
Reply:Nope. I hate scallops.

Reply:i would give that two thumbs up....yummy.......what kinda of wine will you serve?
Reply:Yes!

Seared scallops are very good. Scallops are like steak - you can eat them rare inside, if you like them that way, so many people sear them. I think searing them gives great flavor - having the outside slightly crispy and brown and a creamy, flaky inside gives them great flavor and texture.

Also, I love brown butter sauces - they have a nice nutty flavor which should go well with the scallops. Just be careful when you cook it - brown butter sauces can quickly become black, bitter sauces. Watch it carefully when it starts to brown.

Enjoy!
