I want to roast a chicken...have usual suspects..rosemary, thyme, sage?

lemons, limes....want a crispy skin...start temp high go to low or start out low end with high?

I want to roast a chicken...have usual suspects..rosemary, thyme, sage?
Very easy. Heat the oven to 350. Salt and pepper the cavity. If you want, put a half onion and/or a few pieces of celery inside. Once the chicken is hot enough to melt butter, drop some pats of butter on it and salt and pepper the skin. I like rosemary and thyme together but not too strong. Just bake it in the oven for 20 min per pound. When the meat starts to shrink back from the leg bones a little, turn on the broiler and brown the skin to a pretty color. Never walk away with the broiler on, it's super fast and will ruin a meal super fast.
Reply:I actually love to cook but I cheat when it comes to a roasted chicken. I use a cooking bag and put a little celery inside the chicken for a simple but tasty flavor.


For a crispy skin, start low and end high. (You can roast the chicken til done and then sear it in the broiler to crisp the skin, watch it to prevent burning though.)


Use your imagines and the spices you have, rosemary and a touch of sage and just a pinch of thyme (unless the thyme is fresh, then lavish on!) Squeeze the lime on just before serving for a nice touch.
Reply:Clean, rinse %26amp; pat dry chicken. Slice citrus fruits along with a couple of cloves of garlic %26amp; place in cavity of chicken. Melt 1 stick of butter over low heat with assorted herbs broken up...Pour half of mixture inside chicken %26amp; the other half over the outside. Bake @ 350 for about an hour to hour %26amp; half - juices will run clear. If top starts to brown too much, cover with foil the last 20 - 30 minutes......Yummy!





I would serve wtih dressing, mashed potatoes %26amp; gravey, green beans or peas %26amp; fresh dinner rolls. don't forget the sweet tea!

some rotisserie chicken seasoning, in the spice section of any


store.Then preheat oven to 400 degrees,use a whole chicken,


rinse it in cold water, then sprinkle all over with the seasoning.


Put the chicken in a roasting pan and bake on center rack,about


1hour--to--1hour and 15 minutes.

Reply:Make some garlic butter and brush it on first. Add your seasonings and bake uncoverered at 325 f 20 minutes per pound.
