When can I harvest the leaves of my sage plant?

I grow sage in my backyard. It's a pretty easy plant to get going too. It will grow even in poor soil.


I pick the leaves through out the season, and after the weather starts to turn cold before the first frost I clip it back (about 2 inches from the ground. Older sage will have a slight woody taste to it, so the younger plants work the best.
