how do i keep my herbs fresh through the winter??
HELP i just harvested a bountyful of fresh herbs rosmary sage oregano marjoram parsly , how do i store them??
i'm not sure they will last through the winter but usually store them in a wet papertowel in a ziploc in the fridge. You should dry out everything else that you wont be using anytime soon and then use that for cooking later.

Reply:Fresh? That's tricky. You could chop them, put them in ice cube trays a tablespoon at a time, top with water and freeze them. Then put the cubes in a freezer bag and squeeze out the air. Those will keep pretty well for stews and soups and suchlike.
I usually make pesto out of basil and parsley. If you make a lot you can freeze it, but freeze it before you add the cheese.
Reply:Best thing to do is to dry them, you can do this in the microwave, or just let them dry naturally, and put them in jars for use during the winter. To dry them in the microwave, strip the leaves from the stems, place them on a paper towel in a single layer%26gt; Cook on HiGH for 30 seconds, then turn them over and cook for 30 seconds more, checking at 5 second intervals to make sure they don't burn. Another 30 seconds if necessary. Do not dry them in the sun or their oils will evaporate, leaving you with tasteless green stuff.
You can freeze them, the most suitable for this are parsley, dill and fennel which tend to lose some of their flavor when dried. Wash them dry them thoroughly, put them in small plastic freezer bags and place them in the freezer. To use them, crumble them directly into whatever you are cooking still frozen. You can also make herb vinegars with them.
Rosemary is one that is best dried. You can also dry herbs in the oven on warm, just check them often to make sure they don't burn.
